Recipes of the old-fashion for pasta salad of Pago Pago (prawns) and GTA Potato Rolls

Pasta salad of Pago Pago is a salad shrimp-pasta that is perfect for a light lunch or dinner. Add that this recipe old-fashion for potatoes cloverleaf rolls for a nice touch.


PASTA SALAD-PAGO PAGO


1 can pineapple chunks (20-oz) in their own juice, drained (juice reserve)
1 can (10 1/2-oz) manadrin oranges in syrup light, drained (juice reserve)
8 oz cooked macaroni
shrimp average 1/2 lb, shelled and deveined cooked,
1 medium red or green bell pepper, julienned
1/2 cup sliced green onion


Dressing:


1/3 cup salad oil
3 tablespoons fresh lime juice
2 teaspoons vinegar balsamic or red wine
tsps 1 1/2 grated fresh ginger
3/4 teaspoon salt
1/8 teaspoon red pepper
1/8 teaspoon freshly ground black pepper


In a large mixing bowl, combine chunks of pineapple, oranges, macaroni, shrimp, green pepper and onion. to make the dressing:


In a jar with a tight fitting lid, combine oil, 2 tbsp pineapple juice reserved, 1/4 cup reserved Orange syrup, lime juice, vinegar, ginger, salt and pepper.Cover and shake.Pour the mixture of pasta seasoning, while the pasta is still hot.Serve at room temperature.


Makes 8 servings of about 265 calories each.


For healthier choice, prepare home-made fresh pasta. You basically just need a good pasta dough recipe and a pasta machine.


CLOVERLEAF POTATO ROLLS


1 cup sugar
1 cup margarine
1 cup mashed potatoes
2 eggs
11 cups of flour
1 cup of milk powder
2 tbsp salt
3 cups of hot water
4 pkgs dry yeast, softened in 1/2 cup hot water


Preheat oven 375 degrees.


Mix sugar, margarine, mashed potatoes and eggs. in a separate bowl, combine the flour, milk and salt. mix together both mixtures as if making a pie crust. Add water and yeast sweetened. mix thoroughly for 5 minutes and knead. Cover and let rise in a warm place until doubled in bulk. Work down and shape in cloverleaf rolls. Leave again rise until doubled and then bake at 375 degrees until golden brown, about 15-20 minutes when you form the dough into Quadrifoglio rolls, put them in to bake muffin pans.
